Red Onion and Courgette Pizza

This recipe is for a traditional italian style pizza - which rather than the UK tradition of covering the pizza base with tomatoes and onions - uses a much more subtle mix of cheese, onions and sun dried tomatoes.

As this pizza uses rather less cheese than the traditional UK variant - and rather more vegetables in the topping it is quite a healthy and balanced option.




Ingredients (serves up to 4 - but probably best for 2)

Pizza Base

350g/12 oz/3Cups plain flour
1 sachet of fast-action yeast
2 teaspoons of salt (can be reduced if desired)
Lukewarm water to mix

Pizza Topping

2 Red Onions thinly sliced
60ml/4 table spoons of olive oil
2 Courgettes - thinly sliced
Salt and ground pepper
Fresh nutmeg - grated
4 ounces of goats cheese - or buffalo mozzarella
4 Sun dried tomatoes in oil - diced
Dried oregano

Preparing the Pizza base

Preheat the oven to 200C - Gas mark 6.
1) Mix the flour, yeast and salt together, then mix to a firm dough with warm water
2) Knead the dough for about 5 minutes until smooth and elastic - then roll into a large circle
and place onto a lightly greased baking tray
3) Place it somewhere warm and allow it to rise whilst the topping is cooked

The Topping

Gently fry the onions in half the oil for 5 minutes then add the courgettes and fry for a further 2 minutes
Season and add nutmeg to taste

And finally

Spread the vegetable mixture over the pizza base, dot with cheese tomatoes and oregano.
Sprinkle over the rest of the olive oil and bake for 12-15 minutes until golden and crisp
